This work reflects Nicolas Boulard’s interest in “living” materials—such as cheese or wine—whose final form he can never fully control, as a multitude of unknowns intervene during the production process. Here, the various phases of bread production, from kneading to baking, transform flour, water and leaven into an organic, cavernous mass whose final appearance is rendered random.
